Our Favourite Shortbread Recipe

Our favourite shortbread recipe is great for the upcoming festive season, it's easy to make and is a great gift idea (it's always a hit in our family). This recipe won't take long either! Come into our store, located in Yarra Glen Victoria or shop your bakeware needs online here.

Prep time - 15 mins

Bake time - 20 mins


  • 250g softened butter
  • 3/4 cup caster sugar
  • 1 tsp vanilla essence
  • 2 cup plain flour
  • 1/2 cup rice flour


Step 1

Start with preheating your oven to 160°C. Then line with baking paper or reusuable non-stick baking sheets . Beat the butter with an electric mixer, then add sugar and vanilla essence until you have a light and fluffy texture and look. Using a flour sifter, sift both flours into the the butter mixture and stir through until you achieve a dough-like consistency. 

Step 2

Divide the dough into 2 portions. Shape into 2 discs. With a rolling pin, roll 1 portion between 2 sheets of baking paper to form a 20cm round. Repeat with the remaining dough.

Step 3

Using your favourite shaped cookie cutter to portion the shortbread, then sprinkle with a tiny bit of sugar before placing on the baking tray.

Step 4

Bake for 20 minutes or until golden, swapping the trays halfway through cooking. Cool on the trays, then serve.
